目前有分加拿大干貝和北海道干貝
價位大約是每公斤八百和一千
外型後者約是前者的兩倍大
採買的時候盡量挑選還未解凍出水的干貝 最好向工作人員要袋冰塊
回家後可分裝部分到舖著保鮮膜的盤子上 方便烹調時拿取
或是會抓解凍時間 提早放至冷藏庫解凍
烹調前可以用微波爐解凍至表面略有些微薄冰狀態
並且用菜刀在表面切幾道交錯切痕 兩面都要
可避免干貝在平底鍋上滑凍 也使得加熱迅速達到內部
試過的烹調法為用奶油以及橄欖油煎
用橄欖油似乎較為適合 奶油會搶去干貝的鮮甜
調味方面 在一面灑上些粗粒海鹽 引出鮮甜即可
口味重的人可以加上些黑胡椒 黑胡椒的香和干貝的甜頗搭
中火煎至表面微焦 約三分鐘
熟度約八分即可 干貝中間(整體四分之一)為生的狀態
煎過後直接當點心吃享受海鮮的美味 或是加上些芝麻葉和其他西式生菜
至於加拿大產和北海道產的比較..
以我的做法 加拿大干貝大勝 明顯鮮甜得多 口感較嫩 汁多味美
家中的貓忍不住誘惑跑上餐桌舔食餐盤剩下的汁液 而招來一頓毒打
北海道干貝甜味不明顯 煎過後十分有咬勁...可以讓你咬上很久很久...
推測適合拿來做中式熱炒 蠔油干貝應該不錯
取咬勁 而用味道強烈的蠔油提味
也可能比較適合生吃...但是這不是函館朝市裡的豪華海鮮蓋飯...
我也沒有強壯的腸胃試吃解凍後的生干貝...
